The piece of equipment is for butter making. First churn the milk by any number of various methods, take the “glump” of butter and plop it on the wooden tray and pat it down. Crank the handle it passes over the butter and presses out any remaining liquid. Then the butter maker takes 2 paddles and pats it into the rectangular block and voila! Butter. I found a video online by a British Co. called Pathe. At the 7 min. mark you’ll see this equipment. Sweet!
